Mix Salad with Beets & Carrots

Ingredients;

  • Shredded carrots
  • Beets
  • Arugula
  • Mix nuts (pumpkin seeds, cranberry, sunflower seeds)
  • Red Onion
  • Feta cheese

Dressing; apple cider vinegar, olive oil, Herbamare salt (Vogel)

I like to make it as simple as possible, therefore the portion is all up to you.

Serving size is according to your liking.  If I am serving for 4 people.  2 cups of shredded carrots, 1 cup of beets sliced, a handful of arugula, 1 small slice onion. Add 3tbs of mix nuts and 2tbs of feta cheese (crumble).

Dressing; In a 70 ml saucer or glass container with lid, mix ¾ of olive oil and ¼ of apple cider vinegar and 2tsp of salt and add fresh grounded pepper. Shake and add into the mix salad bowl.  Toss the salad with the dressing and voila!
