Recipe for vegetable Quinoa Salad

1 cup of Quinoa

1 cup of grape tomatoes(diced)

1 cup of cucumber(diced)

1 sweet yellow pepper or red

¼ cup of fresh parsley or basil

 

NOTE:  You can add other vegetables to your taste

Dressing

4tsp of extra virgin olive oil

Herbamare (salt) to give flavor

Apple cider vinegar or lemon or balsamic vinegar whichever is better digestive for you

Stove Directions

1-      Rinse 1 cup of quinoa

2-      In a medium sauce pan bring 2 ½ cup of water or low sodium broth to boil” chicken”( if you choose low sodium broth do not add more salt when dressing up) unless needed for extra taste

3-      Add Quinoa, stir and reduce heat to medium low, cover and cook for about 15 min or until all liquid is absorbed.  Let stand for 5 min

4-      When done, the grain is translucent

5-      Add all ingredients
